Summer Recipes

I had some girls ask for these recipes the other day, so as long as I was typing them out, I figured I would share them. Many of you guys already have both of these, as they are standards of mine. But just in case you don't:

My favorite summer drink...

Brandy Slush
1/2 cup sugar
3 cups water

Dissolve over low heat

Add 6oz can frozen OJ concentrate & 6 oz can of frozen lemonade concentrate (keep the heat on to melt). Stir in 2 cups of Brandy. Freeze over night. Serve 1 scoop (ha! yeah, right) with 7-up or Sprite.

(my grocery store didn't have 6oz cans last time, so I had to adjust the other ingredients proportionally, just as a heads up)

Blueberry Buckle

Mix:
3/4 cup sugar
1/2 cup soft shortening (butter)
1 egg

Stir in 1/2 cup milk

Sift and stir in :
2 cups flour
2 tsp of baking powder

Add 2 cups of drained blueberries

Spread batter in greased and floured 9" square pan

Topping:
Mix and top batter with:
1/2 cup sugar
1/4 cup flour
1 tsp cinnamon
1/4 cup soft butter

bake 45-50 min in 375 oven.

(I love the topping a ton, so I sometimes double that part!)

I am going to try the buckle ONE more time. As you probably remember, that is one recipe that has NEVER worked for me. I even secretly thought that you were purposely leaving something out so that mine would never work. That was the devil sitting on my shoulder side of me thinking. So, tomorrow, I will be off to the store for the ingredients. If it doesn't work this time, I will just happily resign myself to enjoying it at your house!

(I know the slush works and I do enjoy that on a hot evening! Preferably, surrounded by family and friends all having fun.)

Oooooo buckle! Mike was just saying he wanted to make a sweet to eat this week so I will nominate that one!

VICTORY!!! Dad and I had a delicious blueberry buckle yesterday. It turned out perfectly! Makes me wonder what the other recipe that I wrote down from the telephone was. Oh well.
There is one small piece left over and I'm thinking Dad and I will split it for dessert tonight.

Dad agonized over the Aggie baseball game, even though the final was 14-6. A&M has a regional and so do the Owls. The Aggies don't have a great closer and I think that will hurt them. (Like I know baseball, right?)

Can't wait to see the pictures from the wedding weekend.
