Ashton Lee is almost 2 weeks old, and L and I are excited to meet him (probably more me than L but we’ll give him the benefit of the doubt). I’ve really been struggling with what to take over for dinner though! Initially I thought Mrs. McDougall’s Mexican Spaghetti would be perfect because it freezes so wonderfully (I can’t believe I just used that phrase), till mom reminded me how bland Erin’s diet needed to be as to not upset Ella-Bella’s belly. The Mexi-Spaghetti, although one of my all time fav’s, might have too much kick to it. So now I’m thinking this recipe from the Trusty-never Dusty “Women of Great Taste” cookbook that is so loved by the women of great taste in my family.Chicken Again
1/4 pound fresh mushrooms, sliced
2 tablespoons butter
1 can (10 3/4 oz) cream of mushroom soup
1/2 cup of half and half
2 tablespoons white wine or dry sherry
2 cups cooked diced chicken or turkey
8 oz linguine cooked al dente and drained
1/3 cup freshly grated Parmesan cheese
Preheat oven to 375 degrees. Grease a 2 qt. casserole dish. Saute mushrooms in butter. Combine soup, half and half and wine in a large bowl until well blended. Add linguine, mushrooms and chicken and mix gently. Spread mixture in prepared dish. Top with cheese and bake until bubbly, 25 minutes.
I’ll be leaving out the wine even though its not very much. I don’t want to be responsible for Ashton’s first buzz, at least not yet. But what about a good veggy to bring over? Only requirement is that it has to be able to be made ahead and reheat nicely. How about it Breast Feeding Mom’s out there (I can’t believe how many I know!)? What are the landmines I need to avoid? That one thing that kills the tiny tummies of all those precious babies out there?

Well, lets see. Definitely stay away from the gassy foods - broccoli, cauliflower, etc. If she ate spicy foods while she was pregnant and didn't have a reaction, you can make it a little spicy. I eat wings all the time! We were brought cassseroles, chicken packets and lasagna. We even received something from one of those places where it is just take out. The one suggestion I would give is to make something that is good hot and luke warm. You think you're ready to sit down for dinner and the little one has something to say about that! There is always colossal cheeseburger:)
how about carrots or asparagus? Libby never had problems with either. Here's a good carrot recipe:
Candied Carrots
2 lbs carrots
2/3 c marmalade
2 T Brown Sugar
2 T Butter
2 T Rum
Steam carrots for about 10 min. Transfer carrots to a serving bowl. Stir marmalade into carrots until it has melted.
Combine brown sugar, butter and rum in sauce pan. Cook over medium heat until butter & brown sugar melt. Remove from heat and pour over carrotts.
Actually my friend brought over the Mexican Spaghetti after Ella was born and it was by far the biggest hit with Mike and Ella didn't seem to mind either. She just brought that, some French bread and some dessert. Of course it was all horrible for you but after starving myself for 9 months, I was ready to eat! So, I say forget the veggie!!! He he.
